Tony Taylor is the IT & Business Change Director at Greggs, where he has led the bakery giant’s tech transformation for over a decade. A key driver behind Greggs’ evolution into a “modern food-on-the-go” business, Tony has overseen the roll-out of enterprise platforms like SAP, the launch of Greggs’ in-house customer app, and the expansion of click-and-collect and delivery services—all while ensuring technology remains a tool to empower frontline teams, not complicate their work.

He’s passionate about using tech to enhance customer experience, improve shop operations, and drive positive social impact through initiatives such as the Greggs Foundation. With prior leadership roles at Walmart in Asia and Europe, Tony brings deep expertise in global retail strategy, supply chain and digital enablement.

At Greggs, Tony is a vocal advocate for communication-led change, always balancing innovation with the practical needs of over 2,600 shops and 28,000 colleagues.
